An definitely delicious italian meatloaf

During this lesson we will make together a "polpetonne" or Italian meatloaf surrounded by smoked bacon to keep all the softness. This is the kind of dish we love to enjoy when it starts to get a little cold outside. Accompanied by good mushrooms and sautéed spinach, you are sure to please the whole table.

* For step 1:
° Ground beef 400 g
° Bread: 120 g
° Parmesan Parmigiano Reggiano: 50 g
° Flat parsley: 20 f
° Egg: 1 piece
° 1/2 skimmed milk: 6 cl
° Slice of smoked pork belly: 8 pieces
° Garlic clove: 1 piece
° Lemon: 1 piece
° Grated nutmeg: 4 pinch
° Pepper mill: 4 turns
° Fine salt: 4 pinch
* For garnish :
° Seasonal mushroom: 600 g
° Garlic clove: 1 piece
° Spinach shoot: 400 g
° Olive oil: 1 tbsp. soup
° Fine salt: 4 pinch
° Pepper mill: 4 turns

* Preparation:

1 - For the meatloaf

Peel and degerm the garlic. Zest the lemon.
Mix the stale bread with the garlic and parsley. Pour into a bowl and add the milk.
Add the ground beef, lemon zest, Parmesan and grated nutmeg, mix.

Incorporate the egg and mix to obtain a homogeneous paste.

2 - For assembly and cooking

Preheat the oven to 180 °
Place a sheet of baking paper on the work surface then place the breast slices, superimposed, on top.
Using wet hands, form a sausage with the meat and place it on the slices.
Roll up slices of breast. Place the meatloaf in a cake tin-type mold. Bake for 35 minutes. Drizzle with the cooking juices and cook for another 10 minutes. The breast should be golden brown. Let cool before slicing.

3 - For the garnish

Peel and degerm the garlic. Finely chop.
Dry the mushrooms if necessary, cut them into 2 or 4 depending on the size.
Heat the olive oil and sweat the garlic first. Add the mushrooms and heat over high heat so that they return their vegetation water. Add the spinach leaves and continue cooking for 4 minutes. Season with salt and pepper and set aside.

4 - For training

Cut the meatloaf into thick slices.
Place a base of vegetables and top with slices of meatloaf.
Decorate with parmesan shavings and spinach leaves.
