Beef and Cheese Chimichanga

This recipe from Tex-Mex cuisine diffuses the sun on the plate!

* Ingredients:

° 6 large flour tortillas
° 1 lb ground beef
° 1/2 onion, chopped
° 1 clove of garlic
° A pinch of black pepper
° 2 red tomatoes, diced
° 2 grilled green peppers, cleaned, chopped into small pieces
° 2 cups of refried beans
° 2 teaspoons of flakes
° 1 teaspoon of ground cumin
° 2 jalapeño peppers, grilled and chopped
° 1 cup grated Monterey Jack orange cheese

* Preparation:

Start by sautéing the garlic in a little oil, along with the onion and the meat. Add the tomato, spices and everything else except for the tortillas.

Spread this mixture into each tortilla: fold the tortilla as if we were going to make a burrito and fold the ends of the tortillas inwards so that they remain tightly closed on all sides. Use toothpicks to make sure your montage will hold together in one piece during the next step, as we fry them in oil.

Fry them in canola oil, two at a time if your pan is large enough, turning them gently to make sure all sides of the chimichangas are fried as evenly as possible.
