Carrot Cake Cheesecake Cake




This dessert is the result of the union of two great classics: you will see how the marriage of flavors is quite simply exquisite. The all family will be asking for other !

* Ingredients:

* Cake
☞ 2 1/4 cups unbleached all-purpose flour
☞ 1 1/2 tsp. baking powder
☞ 1/2 small spoonbaking soda
☞ 1/2 small spoon  1/2 teaspoon ground cinnamon
☞ 1/2 small spoon  ground nutmeg
☞ 1/4 small spoon  salt
☞ 4 eggs, separated
☞ 1 3/4 cup brown sugar
☞ 3/4 cup canola oil
☞ 1/2 cup orange juice
☞ 4 cups of peeled and grated carrots
☞ 1 cup walnuts, roughly chopped
☞ 1/2 cup dried currants

* Icing
☞ 1 pkg. Of 250 g cream cheese, softened
☞ 2 large spoon unsalted butter, softened
☞ 3 cups  icing sugar

* Preparation:

*Cake
Place  the grill at the center of the oven. Preheat the oven to 350 ° C . Streak  the bottoms of two 20-cm (8-inch) springform pans with parchment paper .
In a bowl, mix  the flour/ baking powder/ baking soda/ spices and salt  .
In other  bowl, whisk  the egg whites with an electric mixer until thin . progressively add 1 cup of brown sugar and beat  until the meringue forms stiff summit .
In a another  bowl, beat  together the egg yolks/ oil/orange juice and remaining brown sugar . Sweetly  fold in the dry ingredients . Employ  a spatula, fold in the meringue by sweetly  folding then the carrots/nuts / raisins.
Separate the dough within the molds . Bake about 1 hour and 10 min  Let it cool and unmold the cake
* Icing
In a bowl, an electric cream the cheese and butter  . Progressevily  add in icing sugar until frosting is soft  & creamy .
Sprinkle  the icing on top of the cakes & ENJOY !!
