Creamy lemon squares




If you like the lemon meringue pie recipe, or more generally lemon desserts such as lemon cake, you’ll love lemon shortbread squares, called lemon square in Anglo-Saxon countries. A shortbread base, and a well-balanced lemon cream, sprinkled with icing sugar. This is an easy-to-make recipe that can be cut into small squares and shared. For a little snack during the holidays it will be perfect!

Ingredients :

☞ 150 g flour
☞ 1/2 small spoon of salt
☞ 60 g icing sugar
☞ 100 g butter
☞ 3 eggs
☞ 150 to 200 g of sugar
☞ 3 lemons
☞ 2 large spoon of cornstarch
☞ icing sugar

* Directions :

1 – Sift 150 g of flour + ½ cc of salt + 60 g of icing sugar.
2 – Mix or mix with your fingers with 100 g of cold butter cut into cubes and spread in the bottom of the mold lined with baking paper, pack well, then set aside 30 min in the fridge
3 – Bake at 180 ° C for 20 min
4 – Prepare the lemon apparatus: whisk 3 eggs + 150 to 200 g of sugar + zest of one lemon and juice of 3 lemons (i.e. 150 ml) + 2 tbsp. tablespoons of maïzéna (dilute in lemon juice for example) and thicken the mixture for 5 minutes over medium heat, mixing well
5 – Pour over the shortbread base, bake for 10-15 min
6 – Let cool completely , then sprinkle with icing sugar
