Jamaican banana bread recipe





As the banana bread bakes, the aroma of chai spices fills the room - and makes you feel like you are in an exotic spice market.


* Ingredients:

° 1 1/2 cups all-purpose flour
° 2 cup + 1/2 small spoon cinnamon
° 1 c. baking powder
° 1 c. baking soda
° 1 c. 1/2 small spoon ground ginger
° 1/2 c. salt
° 1/2 c. ground cardamom
° 1/2 cup + 1/2 small spoon ground allspice
° 1/4 c. ground cloves
° 1/4 c. ground anise or fennel seeds
° 1 pinch of freshly ground pepper
° 2 eggs
° 1 cup granulated sugar
° 1/2 cup plain 2% Greek yogurt
° 1/2 cup butter, melted
° 2 c. vanilla
° 3 ripe bananas, mashed, about 1 1/2 cups

* Preparation:

Preheat the oven to 350 ° F (180 ° C). Oil a 9 x 5-inch (23 x 13 cm) loaf pan and cover with parchment paper.
Combine the flour, cinnamon, baking powder, baking soda, ginger, salt, cardamom, allspice, cloves, anise and pepper. In separate bowl, beat eggs, sugar, yogurt, melted butter and vanilla until smooth. Add the bananas and mix well; stir into flour mixture.
Pour dough to prepared pan; equate the top. bake for   66 min . Let cool completely in the pan on a wire rack.
Wrapped, banana bread will keep for up to 2 days at room temperature; in heavy aluminum foil, it will keep for up to 2 weeks.
