Pineapple Cake with Cheese Cake Filling




This is 'the one! The combination of the creamy cheesecake and pineapple makes the cake perfectly decadent!! It took me many years of searching and baking to find the best recipe and this is it! Enjoy!



INGREDIENTS :

- 1 super moist yellow cake mix
- 1 tablespoon pineapple juice
- 1 large egg
- milk
- butter, melted

INSTRUCTIONS :

1. Be careful to follow the directions on any super moist yellow cake mix you choose (I love Duncan Hines), however, you may want to replace the oil in the recipe and use melted butter instead.
2. Replace the water in the recipe and use whole milk instead. then add one more large egg than the directions call for, and add the tablespoon of pineapple juice. You should follow the directions as they are for baking. Pour batter into two greased 6 inch cake pans. When Baking, make sure to bakea according to box directions or until cake tester comes out clean when inserted in the center of cakes.
3. When you fell the two cakes are baked, cool them completely.

#No Bake Cheese Cake Filling

- 3 (8oz each) packages cream cheese (room temperature)
- 2/3 cups plus 6 tablespoons sugar
- 1 to 1/2 cups whipping cream
- 3 tablespoons pure vanilla extract

4. Whip in the electric mixer the heavy cream on high speed, until soft peaks form and set aside. Pick another bowl and mix the cream cheese, sugar and vanilla on medium speed, until light and creamy. Fold in the whipped cream.

#Cake Assembly

5. Make cake as directed and cool completely. With a long serrated knife slice the two cakes in half lengthwise through the middle. Set all four of the cake layers aside.
6. Place your bottom layer on a plate and please be sure to be evenly flat on top. Pour and spread some of the cheesecake filling on bottom layer then top with a second cake layer that should be evenly flat as well. Pour and spread some of the cheesecake filling on second layer. Add a third layer. it should be also evenly flat on top. Spread the remaining filling on top and all around the sides cake using a flat spatula .
7. Once done, place a pineapple ring on top of cake and gently press down into filling, making fine crumbs out of the final layer you did not use by using a food processor.
8. Finally, apply cake crumbs to the sides of cake. For an added garnish, top with a maraschino cherry!
