Quick & easy strawberry jam



The favorite jam of the French, strawberry jam is also one of the easiest to make. Get started!


* Ingredients:


° Strawberry 1 kg

° Sugar 700 g

° Lemon juice


* Preparation:


In a large bowl, alternate layers of sugar (600 to 700 g depending on taste) with a kilo of washed, lightly patted and hulled strawberries. Add the juice of a small lemon, which will bring out the scent of the fruit, and leave to stand for about 12 hours, covered with a damp cloth. Be careful to choose fruits that are neither too ripe (the jam would not take well) nor too green (they lack taste).


Using a colander, filter the strawberry syrup that will appear after the 12 hours of rest. If you are short on time, you can also cook the sugar with a glass of water until it is completely dissolved (120 ° C). You won't need to rest.


Put the syrup in a saucepan and bring everything to high heat for about ten minutes. Throughout cooking, remember to skim well regularly to eliminate the foam that forms on the surface. The ideal is to use a copper basin, but know that a stainless steel saucepan is also very good.


Add the fruit to the pan, and cook them for 20 to 30 minutes, continuing to skim regularly. If you forget to skim, don't panic. All you need to do is add a small knob of butter at the end of cooking, which will cause the foam to dissipate.


To know if the jam has taken well, just take a spoonful and place it on a plate and tilt it. If the jam does not flow too much and it freezes: stop cooking, it is ready. If you find your jam too runny, cook it again for 5 minutes.

To finish

Allow the jam to cool, then fill sterilized jars with it. Unlike other jams, strawberries must be potted cold so that the fruit does not come to the surface. Rather than buying new jars, don't hesitate to recycle your old empty jam jars. But in all cases, consider sterilizing them by immersing them for 20 minutes in boiling water.
