Ritz Cracker Salted Caramel Icebox Cake

What is great about this dessert is that it can be adapted to infinity, replace the Speculoos with small butter, Breton shortbread ... but also the vanilla ice cream with other flavors, caramel with chocolate, fruit coulis ...

* Ingredients:

° 1/2 liter of vanilla ice cream
° 150g of Speculoos
° 40g of melted butter
° 100g salted butter caramel

* Preparation:

Take the ice cream out of the freezer and let it soften for 30 to 40 minutes
Meanwhile, crush the Speculoos into crumbs and mix them with the butter until the Speculoos are well soaked.
Place cling film at the bottom of 4 mini tart molds (or a standard mold) and add the Speculoos on top to create a layer (cover the bottom and sides like a pie crust)
Put the Speculoos pies in the fridge for about 20 minutes Then cover the bottom of the pie with 3/4 of the caramel
Then add the vanilla ice cream and spread with a spoon to even out the ice cream
Finally add the rest of the caramel and put in the freezer at least 4 hours before tasting
