Here is the second version of the quick (or
express) pizza with magic dough that I proposed in a previous post some time
ago. This express pizza dough contains the same ingredients but is prepared in
2 stages with a 10 min rest in between hence the name magic dough 10 min.
* Ingredients:
° 5 glasses of flour
° 2 glasses of lukewarm water
° ½ glass of olive oil
° 1 c. tablespoon of sugar
° 1 c. teaspoon salt
° 3 c. powdered milk
° 2 c. instant baker's yeast
° ½ c. garlic powder
° 1 c. of Provence herbs
* Instructions :
In a bowl, mix 2 glasses of flour (do not
add the whole quantity), salt, sugar and powdered milk.
Add the yeast, mix again and add the
lukewarm water while mixing vigorously. Let the dough rest for 10 min.
At the end of this time, add the garlic
powder, the herbs of origin (for the inhabitants
from the states you can replace the herbs of
Provence with Italian spices) and finally add olive oil.
Incorporate the rest of the flour and knead
to obtain a smooth and homogeneous dough (not sticky).
Here is your dough is ready you can choose
to spread it, garnish it and put it to cook, or like me, let it rest for an
hour. (I admit not having tested the first case so if you test without rest I
would like to have your opinion).
Roll out the dough, drizzle with olive oil,
add the sauce, spreading it in a circle from the center. Garnish to taste.
I added black olives to the jalapeno, tuna,
capers, grated cheese, mozzarella slices. Sprinkle with oregano and drizzle
again with olive oil.
Bake in a preheated oven at 230 C in the
lowest rack.
