Blackberry Cobbler



This delicious cobbler recipe is courtesy of Virginia Willis and can be found in her cookbook.


* Ingredients :



° 1/2 cup unsalted butter

° 4 cups of fresh berries

° 1 cup of sugar, plus one more sprinkle

° 1 cup all-purpose flour

° 2 teaspoons baking powder

° A pinch of fine sea salt

° 1 cup whole milk

° 1 teaspoon of pure vanilla extract

° Whipped cream, fries, or ice cream, to serving

Preheat oven to 350 degrees.



Melt the butter in a large cast-iron skillet or baking dish, in the oven, for 5 to 7 minutes.



Meantime, put  berries in a big bowl. Employ pussy potatoes, puree berries to release juices. If the berries are tart, spread them with sugar.



In other large bowl, beat together flour, baking powder also salt. Add 1 cup of sugar, milk & vanilla extract. Mix until well combined. Remove the pan from the oven and add the melted butter to the flour mixture; Stir on the plus. Pour the mixture into the pan and pour the blackberry fruits and juices in the center.



Transfer the pan to the oven and bake until golden brown, and the cake tester comes out in the batter coming out clean, about one hour. Serve hot, warm, or at room temperature with whipped cream, fresh cream, or ice cream.
