- INGREDIENTS:
- FOR THE CAKE:
+400g Of cake flour, about 2 cups.
+ 1/2 tsp. of salt.
+ 225g Of unsalted butter.
+ 200g Of softened cream cheese.
+ 400g Of granulated sugar.
+ 6 separated large eggs.
+ 2 tsp. Of lemon zest.
+ 1 tsp. Of Boyajian lemon oil.
+ 2 tsp. "POPPY SEEDS".
- FOR THE GLAZE:
+ 2/3 C. Of powdered sugar.
+ 6 tsp. Of fresh lemon juice.
+ 1 tsp. Of butter.
- INSTRUCTIONS:
+ STEP 1_Heat up your oven to 325F.
+ STEP 2_Spray with flour-added cooking spray on a light-colored tube pan or 12 cup Bundt pan.
+ STEP 3_Mix the cake flour with the salt and set aside.
Add in the poppy seeds, and blend.
+ STEP 4_Beat the butter, cream cheese, and granulated sugar in the bowl of the stand mixer for 8 minutes, scraping down the sides of the bowl regularly.
+ STEP 5_Add in the egg yolks and mix for about 2 more minutes.
+ STEP 6_Beat in the lemon zest with the lemon oil, regularly scraping down the sides of the cup.
+ STEP 7_Stir the flour mixture, but don't beat.
+ STEP 8_Beat the egg whites in another bowl until they develop soft peaks.
VSTEP 9_Fold in the cake batter with the beaten egg whites, then dump into the prepared pan.
+ STEP 10_Bake the cake for 70 to 80 minutes.
+ STEP 11_Let cool for 10 minutes in the pan, then invert and allow the cake to totally cool on a rack.
+ STEP 12_To prepare the glaze, melt the butter then whisk in the remaining ingredients, mix well until combined for 3 minutes.
