Easy Breakfast Casserole


This breakfast casserole fits whatever ingredients you have on hand (cheese, vegetables, meats) and can be made the night before and cooked in the morning. Or eaten for dinner, you choose!


* Ingredients:


+For the base of the breakfast casserole:

° 6 to 10 large eggs

° 2 to 3 cups of grated cheddar cheese

° 6 slices of bread per day, cut into 3/4 to 1 inch wide cubes

° 2 cups of milk

° Salt

° Pepper

+For possible additions:

° 1 cup of corn (cooked or frozen)

° 1/2 cup chopped broccoli (cooked or raw, raw will be more crisp)

° 1/2 cup sliced ​​mushrooms

° 1/4 cup sliced ​​green onion

° 1 cup diced ham and / or cooked Italian sausage

° A few slices of cooked bacon, minced

° 1 teaspoon of Provence herbs or other dried herbs (or 1 tablespoon of chopped fresh herbs such as basil, rosemary or thyme)

° 1/4 to 1/2 teaspoon cumin or curry powder


* Preparation:



Beat the eggs, add the milk and cheese: Preheat the oven to 350 ° F. Beat the eggs in a large bowl. Mix the milk and cheese.


 Add the bread and stir thoroughly until all the pieces of bread are moistened (do not over mix or the bread may disintegrate).


 Add the additions: Add salt and pepper to taste (if you're using Italian sausage, you won't need it either). If you have a lot of add-ons, you may need a few more eggs to make sure everything touches at least one egg mixture. Just add 2 tablespoons of milk for each beaten egg you add.
