One-plate dinner is the hero of the week we
turn to when we need a quick and easy meal with a lot of flavor and effort. We
have become lovers of roast paper pan dinners, ready-made casserole dinners,
and Shuffle one dough. But we found a new addition to the recipe bunch that we
just couldn't get enough of: the foil packet dinner. Put them in the oven, on
the grill, or on a campfire in the fall, and set them with a delicious meal,
sure to satisfy even the most skeptical of eating (our kids can be our toughest
critics after all!). From seasoned seafood to mouth-watering steaks, these faux
foil flakes should regularly appear on your table this fall.
* Ingredients:
° 1 lb small red potatoes cut into wedges
° 2 carrots, sliced into rings
° 1 red pepper + 1 green pepper, diced
° 1/2 red onion, chopped Salt and pepper
° 1 tablespoon olive oil
° 1.5 lb sirloin steak cut into cubes
* Garlic and fine herb butter:
° 1/2 cup (125 ml) butter at room
temperature
° 1/4 cup (65 ml) fresh parsley
° 4 minced garlic cloves
° 1 teaspoon fresh rosemary, chopped
° 1 teaspoon of fresh thyme 1/2 teaspoon of
salt
° 1/4 teaspoon pepper
* Preparation:
In a medium bowl, add the potatoes,
carrots, peppers and red onion. Add salt and pepper. Add the olive oil. Mix
well. Place four large pieces of heavy duty foil on the counter. Distribute the
vegetables evenly on each of the papillotes. Add the meat on top. In a small
bowl, combine all the ingredients for the garlic and herb butter. Place on each
piece of meat. Close the papillotes and cook on the barbecue over high heat for
about 15 minutes or until cooked through to taste.
