Lemon pound cake



A delicious cake with lemony flavors.


You can also make this cake flavored with orange or lime, it's really very good and very fresh. Consider making a citrus sorbet to accompany it or a sauce made from citrus zest.


* Ingredients:


* Cake

° 4 eggs

° 200 g of flour

° 200 g of sugar

° 200 g of butter

° 2 lemons (zest + juice)

° 1 c. to s. baking powder

* Icing:

° 100 g icing sugar

° 1 lemon juice

° 1 c. to s. hot water


* Preparation:



Heat your oven to 180 ° C or TH.6. Melt the butter, either in the microwave or in a double boiler.



Butter and flour your cake mold. Take the zest and squeeze your lemons, set aside in 2 bowls.



Add the sugar to the butter, then the eggs 1 to 1. Mix again.



Add the flour all at once, then the lemon juice (except 1 tbsp), mix again. Add the lemon zest and lastly the yeast, mix and pour the dough into your mold.



Bake for 30 minutes and check that it is cooked but not too golden. Cool on a wire rack.



When it's cold, prepare the icing:

Add the icing sugar + 1 spoon of hot water + the lemon juice, and mix vigorously. Drizzle on  cake with spatula.
