SALTED CARAMEL CHOCOLATE CHEESECAKE CAKE

INGREDIENTS FOR :

THE CHEESECAKE:

–2 MEDIUM PKG.Of softened cream cheese.

–2/3 C.Of granulated sugar.

–2 large eggs.

–1/3 C.Of sour cream.

–1/3 C.Of  heavy cream.

–1 TSP.Of vanilla extract. 

–A pinch of salt.

THE CAKE:

– A recipe chocolate layer cake.{homemade/cake mix}.

THE FROSTING:

–3 to 4 C.Of powdered sugar.

–1 C.Of softened unsalted butter.

–1/2 C.Of caramel sauce.

–2 TBSP.Of whole milk.

–1/2 TSP.Of kosher salt.

THE GANACHE:

–1/3 C.Of heavy cream.

–30g Of dark chocolate.

–2 TBSP.Of caramel sauce.

–A pinch of kosher salt.

INSTRUCTIONS: 

TO MAKE THE CHEESECAKE:

– STEP I:Heat the oven to 325 degrees Fahrenheit. 

– STEP II:Preheat the pan by using a large roasting pan on the lower 2/3 of the oven, too! 

– STEP III: Wrap the bottom of the pan (outside) with a double layer of foil to prepare the springform pan.

– STEP IV:Spray the nonstick baking spray pan and the bottom of the line with a circle of parchment paper. Meanwhile, to use later, boil a kettle of water. 

– STEP V:For 2-3 minutes, beat the cream cheese and the granulate sugar until smooth. Add in the salt and eggs, beating well after each addition, one at a time. 

– STEP VI:Beat in "sour cream", vanilla EXTRACT, AND THE heavy cream. Pour into a 9" {springform pa}n prepared. 

– STEP VII:In the oven, put the pan in the middle of the preheated roasting pan. Slowly pour boiling water into the roasting pan, until the sides of the springform pan reach around an inch of water. 

– STEP VIII:Bake for 45 minutes with the cheesecake. Switch the oven off and let cheesecake sit in the oven for an additional 30 minutes. 

– STEP IX:Remove and cool on the counter completely.

THE CAKE LAYER:

– STEP I:Prepare chocolate cake according to package directions for 9 " cake. Or, like me, prepare a homemade dark chocolate layer cake using THIS recipe

– HOW TO MAKE THE FROSTING:

– STEP I:Beat the butter for 3 minutes in a large mixing bowl, until fluffy. 

Add the caramel sauce, powdered sugar, salt, and milk. 

– STEP II:Beat until tender and creamy, for 5 more minutes.

– ASSEMBLING THE CAKE^ 

– STEP I:Lay one layer of chocolate cake on a cake platter and top it with cheesecake. Then the other chocolate cake layer is added. Around the whole cake, sides and top spread the frosting. 

– STEP II:Refrigerate the frosted cake while the chocolate ganache is prepared.

– TO MAKE THE GANACHE:

– STEP I:Combine the dark chocolate with heavy cream in a healthy microwave dish. 30 seconds of heat. 

– STEP II:Heat and stir for an additional 30 seconds. Whisk until smooth, for several minutes. Allow cooling slightly. 

Cooled once. 

– STEP III:Spread the chilled cake on top. Sprinkle with the remaining 2 tablespoons of caramel sauce and add a pinch of kosher salt.
