Slow Cooker Cream Cheese Crack Chicken

 


Thai peanut chicken tastes so good and in the slow cooker it's really easy to prepare! A meal idea that is worth the detour ...



* Ingredients:


° 1 tablespoon of olive oil

° 2 lbs chicken breasts cut into 1 inch pieces

° 1/3 cup (85 mL) cornstarch

° 1/2 teaspoon of salt

° 1/2 teaspoon of pepper

° 1 14-ounce can coconut milk

° 3/4 cup (190 mL) smooth peanut butter

° 1/4 cup (65 mL) low sodium soy sauce

° 1/4 cup (65 mL) honey

° 2 tablespoons of rice vinegar

° 2 tablespoons of lime juice

° 1 teaspoon of sesame oil

° 1/2 teaspoon of ginger

° 2 garlic cloves, minced a pinch of cayenne pepper

° 1/3 cup (85 mL) salted peanuts, chopped

° 1/4 cup (65 mL) cilantro

° 2 tablespoons of green onions

                                

            

 * Preparation:


Brush the slow cooker with olive oil. In a large ziplock bag, add the chicken, cornstarch, salt and pepper. Shake the bag well. Add the chicken to the slow cooker. In a bowl, join coconut milk/ peanut butter/ soy sauce/ honey/ rice vinegar/ lime juice/ sesame oil/ ginger/ garlic & cayenne pepper. Combine well. Pour blending on chicken. That's a lot of liquid, but it will reduce during cooking. Cooking on high about 2 h. Serving & garnish with peanuts, herbs and green onions.
