SOUTHERN CARAMEL CAKE



One of those sweets that is a genuine labor of love is the Southern Caramel Cake. So rich and decadent, it's a cake that will certainly take any special occasion to a whole new level and is one of the favorite cakes of my family by far. 


LIST OF THE INGREDIENTS:

 

 - FOR THE CAKE

+2 cups and half of the sifted all-purpose flour.

+2 Cups Of Sugar.

+2 sticks unsalted butter.

+Two eggs.

+1 cup water.

+1/2 cup of buttermilk.

+1 teaspoon vanilla extract.

+1 teaspoon baking soda.

+ 1 teaspoon of salt.

 

 - FOR FROSTING

+ 3 cups Granulated WHITE Sugar.

+ 1 stick butter=1 cup.

+ 1 cup of Heavy Cream.

+ A pinch of salt.

+ 2 teaspoons Vanilla Extract.


 - DIRECTIONS:


THIS IS HOW TO MAKE THE Cake:

- Step 1: Preheat the furnace to 350 degrees F. 

- Step 2: Grease two cake pans with butter and sprinkles 2 tablespoons of flour.   

- Step 3: In a large bowl, mix the sifted flour with salt. 

- Step 4: Stir in the sugar and whisk until mixed. 

- Step 5: In a saucepan, mix the butter and water. Bring it to a boil and pour the flour and sugar over it. Whisk till they're combined. 

- Step 6: Add the baking soda, buttermilk, vanilla extract, and eggs and whisk until smooth and well blended.   

- Step 7: Pour into baking pans that are greased and floured. And bake for 25 to 30  minutes. After 15 minutes, check the cake. 

When a toothpick comes out clean, the cake is ready, be careful not to overcook. 

- Step 8: Remove the pans from the oven and allow 15 minutes to cool on a rack, then switch the layers onto the racks covered with parchment to cool fully.


- THIS HOW TO MAKE THE CARAMEL FROSTING: 

P.S: When making this frosting, you will have two pots going, so have it ready to go and have a big hot pad. 

- Step 1: Add 2 1/2 cups of sugar, with butter, heavy cream, and a sprinkle of salt in a big saucepan. Cook until almost to a rolling boil on low, then pour in the sugar syrup you make in another skillet. 

- Step 2: At the same time, put 1/2 cup of sugar in a small skillet and melt on medium until it becomes an amber color. This sugar is not stirred, but every few minutes you will need to shake the skillet to help spread the sugar. This is the sugar syrup you are going to add to the casserole. 

- Step 3: Cook on medium to medium-high when you pour in the syrup, stirring continuously until nearly soft ball stage. 

- Step 4: Remove from the heat, stir in the vanilla, and cool for 15 minutes or so. Either switch and beat on medium speed to the stand mixer or use a hand mixer on medium and whip until frosting consistency becomes, Its about 15 to 20 min.

You should add a little extra cream if the frosting sets too fast or gets too thick.
