Turkey wings with mushroom gravy


An excellent turkey recipe with mushrooms

* Ingredients (4 people):

° 4 Turkey osso bucco

° 4 Turkey wings

° 4 Shallots

° 2 Carrots

° A leek white

° 500 Gr of Paris mushrooms

° Goose fat

° 25 Cl of white wine

° 10 Cl of roast juice

° A cac of cumin in grains

° Flour

° A bouquet garni

° Salt

° Pepper

* Preparation:

Peel and slice the shallots. Peel and dice the carrots. Wash and slice the leek white. Cut off the earthy base of the campions. Clean them with a damp sponge and cut them into quarters or sixes. Put a large sauté pan over medium heat with a case of goose fat, sauté and brown the pieces of turkey, salt and pepper. Remove the pieces of turkey, instead sweat the vegetables. Put back the turkey pieces, singe with 2 tbsp of flour, mix well. Wet with white wine and roast juice. Bring to shivers. Add the bouquet garni. Lower the heat to low add the mushrooms, cumin, salt and pepper. Cover and cook for an hour. Check the seasoning, remove the cover, turn up the heat, cook and reduce the sauce for half an hour, watching. Arrange everything in a hollow rand pat, decorate with sprigs of flat parsley.
