One of my absolute favorites is this dish. Those “BEEF AND CHEESE CHIMICHANGA“take a little effort and time, so it's worth it. This is a must-try if you like Mexican food! 


• 12 warmed 10“ flour tortillas.

• 1LB/470g Of ground beef

• 1 Big can Of refried beans{16OZ}.

• 3 divided Medium cans of 8oZ Of tomato sauce.

• 1 small can Of_chopped_ green chilies.

• 1 small can Of_chopped_ jalapeños.

• 1+1/2 CUP.Of _shredded_ cheddar cheese.

• 1/2 CUP.Of finely chopped onion

• 2 TSP.Of chili powder.

• 2 TSP.Of minced garlic.

• 1 TSP.Of ground cumin.

• Vegetable Oil for frying.

• Step 1_Cook beef over medium heat in a large skillet until it is no longer pink and the fat drained.  

• Step 2_Add the beans, chopped onion, half cup of tomato sauce, and season using chili powder, minced garlic, and cumin. Mix well. 

• Step 3_On the center of every tortilla, spoon about 1/3 cup of the beef mixture. Fold the closest filling edge up and down to protect. Both sides bend and curl up. And toothpicks to fasten. 

• Step 4_Combine the chilies, peppers, and remaining tomato sauce in a large saucepan, heat through. 

• Step 5_Heat 1 in of oil to 375° Degrees in an electric skillet or deep-fat fryer. 

• Step 6_Fry the chimichangas along both sides until golden brown, for 2 minutes. 

• Step 7_On paper towels, drain them, then sprinkle cheese over them, and serve them with a dipping sauce.

Excellent and saved us a lot of time for a great dinner after work!
