Delicate and easy homemade Cream puffs with
a Dulce de Leche filling! The light, airy puffs are amazing and when filled
with rich cream, they are overly addictive !
Preparation time: 30 minutes
Cooking time: 30 minutes
Servings: 30 puffs of cream
Garnish
° 16 c. Unsalted butter, at room
temperature (2 sticks)
° 1 can of dulce de leche (cooked condensed
milk)
Preheat the oven to 400 ° F. Covering 2 big
baking sheets with parchment paper, set apart .
In a medium saucepan over medium / high
heat, add water and butter and cook until a gentle boil. Cut the fire.
Join sugar, salt also flour mixed at same
time & stirring easy until blended .
Transfer the mixture to a mixing bowl and
start letting the mixture cool slightly. You don't want it to be hot ! Whisking
one egg , beating after every addition.
Fill a pastry bag with some of the cream
puff mixture. Pipe in small puffs of cream (a little bigger than a regular
teaspoon but round). Once piped, slightly flatten the top of the pastry.
Bake 10 minutes at 400 ° F. Reduce heat to
365 ° F and cook for another 20 minutes, or until golden brown. Set aside to
cool completely.
In a bowl of cream, beat the butter until
creamy. Add the dulce de leche and beat until blended, refrigerate.
Put cream at bottom puffs or cutting the
puffs in half and join the cream and close, like a sandwich. Sprinkle with
powdered sugar puffed cream.
