Crab and Shrimp Seafood Bisque



This seafood soup is made with crab and shrimp, but you can choose to substitute other seafood or add a third type, such as lobster, scallop, or flaky fish.

Basic is easy to prepare and cook for a night meal: it's ready in just 15 minutes. Serve with fresh biscuits or crunchy bread. If it is a main course lunch or soup, add your favorite salad.


* Ingredients :


° 3 tablespoons butter

° 2 tablespoons chopped green onion

° 2 tablespoons chopped celery

° 3 tablespoons all-purpose flour

° 2 1/2 cups milk

° 1/2 teaspoon freshly ground black pepper

° 1 tablespoon tomato paste

° 1 cup heavy whipping cream

° 8 ounces of cooked baby shrimp

° 8 ounces of crab meat

° 2 tablespoons of sherry wine

°° Garnish: parsley, cilantro, and / or green onions (chopped)


* Preparation :


Melt the butter in a Dutch oven or large saucepan over a medium-low heat. Adding choppeed green onions also celery. Fry, stirring, untiil tender.

Mix the flour, butter and vegetables until well combined. keep cooking, stirring,  about 3 min .

Heat milk in other saucepan on mediuum heat.

Slowly stir the warm milk, butter and vegetables. Continue cooking, stirring, until firm.

Add freshly ground black pepper, tomato paste, and heavy cream.

If desired, mash the soup in a blender or food processor (see tips) at this point and return it to the saucepan.

Add shrimp, crab, and sherry. Bring it on low heat.

Serve hot, garnished with parsley, cilantro, and / or chopped green onions.
