French Onion Soup Stuffed Meatloaf

 



Mmmmm...my new favorite meatloaf recipe !! This tasty French Onion Soup Stuffed Meatloaf is perfect for dinner !!


YOU'LL NEED :


#For the onions:


- Olive oil: 1 large spoon

- Onions: 3, halved and thinly sliced

- Fresh thyme or dried thyme: ½ Tablespoon

- Kosher salt: 1 teaspoon 

- Pepper: ½ teaspoon

- Beef broth: ¼ cup 


#For the meatloaf:


- Lean ground beef: 2 lbs

- Bread crumbs: ½ cup (gluten free if needed)

- Minced fresh parsley: 2 large spoons 

- Pepper: 1 teaspoon

- Kosher salt: 1 teaspoon

- Eggs: 2, lightly beaten

- Mozzarella cheese, shredded, divided: 8 oz 

- Fresh chopped parsley for garnish (if desired)


#For the sauce :


- Beef broth: 2½ cups

- Cornstarch: 3 large spoons

- Salt & pepper, to taste


HOW TO MAKE IT :


1. For the onions; In a skillet over medium, heat oil and add onions, salt & pepper, cook for about 15 to 20 minutes, stirring frequently or until caramelized.


2. You'll want to add thyme, sauté for about 1 to 2 mis, then add the beef broth; set aside.


3. To make the meatloaf, set the tewmperature of your oven to 350°F. Then, combine together ground beef, bread crumbs or oats, parsley, pepper, salt, and eggs in a bowl.


4. You may want to combine with your hands gently until blended, do not overwork the meat.


5. Afterwards, press the meat mixture into a 10×12-inch rectangle on a piece of plastic wrap or wax paper.


6. You'd best set aside ½ cup of shredded mozzarella cheese and ½ cup of the caramelized onions.


7. The remaining 1½ cups cheese and the caramelized onions should be sprinkled evenly over ground beef.


8. Okay at this point, be sure to roll up like a jelly roll, starting from the short end, lifting the wax paper or plastic wrap as you roll. And please seal the end totaly, and place seam-side down into a 9×13-inch baking pan.


9. Always remember to place pan in the oven and bake for about 45 minutes. It's wise to prepare the sauce while the meatloaf is baking (see below).


10. Alright, you're going now to remove pan from oven, pour the sauce over the meatloaf, and sprinkle with the reserved onions and cheese.


11. When finished, return meatloaf to oven until no pink remains, about 15 to 20 minutes. Afterwards, place under the broiler until the cheese is browned and bubbly, about 2 to 3 minutes.


12. If you like, you can garnish with fresh parsley. And please remove from oven and let stand about 10 minutes. Immediately slice and serve. 


13. For the sauce, you may whisk together, bring to boil, simmer till thickened.
