Pumpkin Cupcakes With Cinnamon Cream Cheese Frosting

 



Super delicious Pumpkin Cupcakes With Cinnamon Cream Cheese Frosting !! This scrumptious cupcakes are perfect for the Fall and has great flavor. Plus, they made my house smell like cinnamon. 


WHAT YOU NEED :


#Cupcakes:


- Softened Butter: 1/4 Cup 

- Unsweetened Applesauce: 3/4 Cup 

- Granulated Sugar: 1 Cup

- Brown Sugar: 3/4 Cup (Packed Firmly)

- Eggs: 2 (Large) 

- Fat Free Milk: 3/4 Cup 

- Lemon Juice: 1 Tablespoon 

- Pumpkin Puree: 1 (15 Ounce) Can 

- All Purpose Flour: 2 1/3 Cups

- Pumpkin Pie Spice: 1 Tablespoon 

- Ground Cinnamon: 1 Teaspoon 

- Baking Powder: 1 Teaspoon 

- Salt: 3/4 Teaspoon 

- Baking Soda: 1/2 Teaspoon 

- Ground Ginger: 1/2 Teaspoon 

 

#Frosting:


- Reduced Fat Cream Cheese: 1 (8 Ounce) Package (Not Fat Free!)

- Softened Butter: 1/4 Cup 

- Confectioners Sugar: 4 Cups

- Vanilla Extract: 1 Teaspoon

- Ground Cinnamon: 2 Teaspoon

LET'S MAKE IT :


1. To start with, preheat your oven to 350 degrees and add butter, applesauce, sugars, and eggs in a large mixing bowl, beating over medium speed until combined. You'll want to add in pumpkin, beating constantly until thoroughly incorporated. Next, combine together milk and lemon juice in a liquid measuring cup; set aside. 


2. Afterwards, combine remaining dry ingredients in a medium bowl. Add the dry ingredients slowly to the pumpkin mixture over medium speed, alternating with the milk mixture, beating well after each addition. 


3. Alright, make sure to line cupcakes trays with paper liners and then spray lightly with a non-stick cooking spray. And please fill cupcake liners 3/4 of the way full and bake until a skewer inserted into the middle comes out clean, for 22 minutes. Immediately, remove from oven and allow to cool.


4. To make frosting, Pick a medium mixing bowl and combine in all ingredients, beating over medium speed until ingredients begin to combine. Slowly increase speed, beating constantly until a frosting is formed. Now that cupcakes cool completely, you may frost as desired and enjoy!
