Snickerdoodle Muffins



Snickerdoodles, also called cinnamon cookies, are small, soft and light cookies made from butter (or oil), sugar, egg (or not) and flour that are coated with a mixture of sugar and cinnamon. Add cream of tartar (which can be replaced with white vinegar or lemon juice) and baking soda.



* Ingredients:


+ cookies

° 1 cup | 226 g unsalted butter

° 1 and a half cup | 300g sugar

° 2 eggs at room temperature

° 1 tbsp | 15 ml vanilla extract

° 2¾ cups  all-purpose flour

° 1 tsp cream of tartar

° 1 tsp baaking soda

° ¼ tsp salt

+ Coating:

° 2 tsps sugar

° 2 tsp cinnamon


* Instructions :


Preheat oven 190 C. Covering a bakiing sheet with paarchment paper also set apart .

In a salad bowl, blend butter also sugar with a blender at high speed

Adding eggs  iincorporating first before adding second

And adding liquid vanilla extract .

Mix the salt & baking soda with flour and incorporaate it to previous preparation at low speed as well as cream tartar (or white vinegar).

In a small bowl, combine the sugar and cinnamon.

Taking 1 tablespoon dough and roll them in sugar-cinnamon blending

Gradually place on the baking sheet.

Bake for about 6 to 8 minutes (for me 7 minutes the first batch and 6 minutes the second).

When out of the oven, carefully remove from the baking sheet and place on a wire rack (the cookies at this stage are very fragile).
