These coconut, cream cheese and white
chocolate cookies are simply delicious! Think about this easy and fun recipe
for your Christmas potluck!
* Ingredients:
° about 2/3 cup of softened margarine or
unsalted butter
° 1/2 cup cream cheese
° 3/4 cup of icing sugar
° 1/4 cup of sugar
° 2 tbsp. teaspoon vanilla extract
° 2 1/4 cups flour
° 1/4 tsp. salt
° 1/2 lb white chocolate, cut into pieces
° 1/4 cup 15% cooking cream
° 3 cups grated sweetened coconut
* Steps :
In a bowl, whisk 125 ml (1/2 cup) of the
margarine with the cream cheese, icing sugar, sugar and vanilla extract until a
creamy mixture is obtained.
In other bowl, mix flour with saalt.
Add the dry ingredients to the wet
ingredients and stir until a smooth mixture is obtained.
Using your hands, form 28 balls, using
about 15 ml (1 tbsp.) Of dough for each. Place the balls on a baking sheet
lined with parchment paper, spacing them about 5 cm (2 inches) apart. Refrigerate
30 minutes.
While ready to baking, preheated oven to
205 ° C.
Bake cookies for 8 to 10 min . Removing
from oven & permit cooled on a rack.
In a double boiler, melt the white
chocolate with the cream and 30 ml (2 tsps) margarine .
In a bowl, place the coconut. Rolling balls
in melted white chocolate, and coat them with coconut.
Reseerve in fridge about 20 min , until
chocolate has seet . These cookies keep cooled .
