Well, I'm at it again, folks. Cover vegetables with cheese so I can eat them ... kind of. Well, I really like broccoli already. It is one of the few vegetables that I can eat on its own. But I covered it with cheese anyway, because hello, broccoli and cheese. They are soulmates.


 You could literally eat broccoli with cheese and it'd be the tastiest thing ever. But, if you are trying to be fancy, or need to include some cauliflower in your child's diets, you can bake it in these adorable pies.


* You will need:


* A large bag of frozen broccoli - thawed -.

* 1 white onion, chop.

* 1 cup of bread crumbs (panko).

* Half a cup of cheddar cheese.

* 1/2 cup Parmesan cheese.

* 2 large / 3 small eggs, beaten.

2 garlic cloves, chop well.

* 2 teaspoons vegetable oil.

* Sea salt.

* Ground black pepper.


* instructions:


* Step 1: Set the oven to 400 degrees, gently grease a baking sheet lined with aluminum foil or spray it with nonstick cooking spray.


Step 2: In a small saucepan, heat two teaspoons of vegetable oil over a medium heat and add the chopped garlic and chopped onions.

Season with salt and pepper.


Step 3: Simmer over a low heat until the garlic and onions are soft, then set aside to cool.


Step 4: Add broccoli to a kitchen towel. To remove excess moisture, place a towel around broccoli. Transfer the drained broccoli to a large basin.


Step 5: Add to the same plate panko bread crumbs, cheese and eggs, and season with salt and black pepper.


Step 6: Mix well, place on prepared baking tray, into pies.


Step 7: Bake for 20 minutes.


Flip and bake until brown and crunchy on both sides.
