Ziti's baked dish features scallops and
shrimp and a silky sauce made with roasted bell peppers and mashed cheese.
Start cooking the pasta, but let it sit for
under one to two minutes. This way, when we combine it with other ingredients
and bake the noodles, it won't be tender.
One of my favorite parts of this recipe is
the sour tomato sauce. It is light and plays well with shrimp and feta cheese.
It's super easy to make - just olive oil, canned tomatoes, garlic, red pepper
flakes, and lemon peel.
For the shrimp, season it with a little
olive oil, salt and pepper. Then, when the noodles are cooked, mix them with
shrimp, spinach sauce and feta cheese.
* Ingredients :
° 8 ounces oily uncooked (short tube-shaped
pasta)
° 1/2 cup hot water
° 1 (12 ounce) bottle of roasted red bell
pepper, strained
° 1 block (8 ounces) soft, nonfat cream
cheese
° 1 tablespoon of olive oil
° 1/8 teaspoon salt
° 8 ounces large shrimp, peeled,
deodorized, and chopped
° 8 ounces bay scallops
° 4 garlic cloves, minced
° 1 tablespoon fresh chopped parsley
Cooking spray
° 3/4 cup (3 ounces) grated grated
provolone cheese

Step 1 Preheat oven to 400 degrees.
Step 2 Cook the pasta according to package
directions, excluding salt and fat. Drain well.
Step 3: Combine hot water, roasted paprika
and cream cheese in food processor; Processure to smooth & scrape sides.
