Crab and Shrimp Seafood Bisque

 


 

Made from crab and shrimp, you can use lobster, scallops, or firm, flaky fish as a good substitute Bisque is very easy to prepare and cook for a weekday meal. If it's a soup for lunch or the main course, add your favorite salad

 

* Ingredients:

 

 

° 3 tablespoons of butter

 

° 2 tablespoons chopped green onion

 

° 2 tablespoons of chopped celery

 

° 3 tablespoons all-purpose flour

 

° 2 1/2 cups of milk

 

° 1/2 teaspoon freshly ground black pepper

 

° 1 tablespoon of tomato paste

 

° 1 cup heavy whipping cream

 

° 8 ounces of small cooked shrimps

 

° 8 ounces of crab meat

 

° 2 tablespoons of sherry wine

 

°° Garnish: parsley, cilantro and / or green onions (chopped)

 

 

* Preparation:

 

Melt butter in a Dutch oven or large saucepan over medium-low heat. Adding chopped green onions also celery. Fry, stirring, until tender.

 

Combine flour, butter and vegetables until well combined. continue cooking, stirring, about 3 min.

 

Heat milk in other sauce pan on medium heat.

 

Slowly stir in the hot milk, butter and vegetables. Continue cooking, stirring until firm.

 

Adding freshly ground black pepper/ tomato paste / heavy cream.
