I had to get my hands on the recipe for the amazing dinner that my daughter-in-law prepared the other night!

Four skinless, boneless chicken breasts, diced into small pieces
- Three cups of russet potatoes, peeled and cubed - One lemon, squeezed and strained - Three minced garlic cloves
Three teaspoons of dry herbs: thyme, rosemary, and olive oil
- Pulverized paprika, 1/2 teaspoon
Two cups of chicken broth and one cup of heavy cream should be used.
1/2 cup of Parmesan cheese that has been grated
Garnish with fresh parsley if desired; season with salt and pepper.
What to do
To begin, heat the oven to 375 degrees Fahrenheit (190 degrees Celsius) and gently coat a medium-sized baking dish with olive oil.
Second, combine the lemon juice, zest, olive oil, garlic powder, thyme, rosemary, paprika, salt, and pepper in a big basin. Toss in the cubed potatoes and chicken pieces, then coat them evenly with the herb mixture.
3. Evenly distribute the chicken and potatoes into the baking dish that you prepared.
4. After adding the chicken broth and heavy cream to the potatoes and chicken, gently shake the dish to ensure all of the liquids have settled.
5. Next, top with grated Parmesan and then cover with aluminum foil.
6. Cover and place in a preheated oven for 30 minutes. Once the potatoes are soft and the chicken is cooked through, take the foil off and bake for another 20 to 25 minutes.
Sit for a few minutes after removing the dish from the oven. If desired, top with chopped fresh parsley and serve warm to eager loved ones.
Alternatives and suggestions—If you want to make it less acidic or use less lemon juice for people who aren't big fans of lemon, you may increase the amount of chicken broth and decrease the amount of lemon juice.
- Feel free to use a different herb combination if someone in your household doesn't like rosemary or thyme. Also, some Italian spice would be great here!
- Tossing in some extra veggies like bell peppers, broccoli, or carrots may make this into a one-dish dinner and is a sneaky way to eat more veggies.
- If you're trying to limit your dairy intake, try using a dairy-free heavy cream and omitting or substituting the cheese with a plant-based cheese.
