Ingredients
1 lb beef stew meat, cut into bite-sized pieces
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
3 carrots, peeled and diced
2 celery stalks, diced
8 cups beef broth
1/2 cup pearl barley
1 (14.5 oz) can diced tomatoes, with juices
1 teaspoon dried thyme
1 bay leaf
1 teaspoon salt, or to taste
1/2 teaspoon black pepper, or to taste
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Step 1: Sear the Beef
Heat olive oil in a large pot or Dutch oven over medium-high heat.
Season the beef stew meat with a pinch of salt and pepper, then add it to the pot.
Sear the beef for 3–4 minutes on each side until browned. Remove from the pot and set aside.
