Ingredients

For the Slaw

  • 4 cups shredded green cabbage (about half a small head)
  • 1 cup shredded red cabbage (for color and crunch)
  • 1 medium carrot, shredded
  • ¼ cup chopped scallions (green onions), white and green parts
  • ½ cup roasted peanuts or sesame seeds (optional, for added crunch)

For the Sesame Dressing

  • ¼ cup creamy sesame paste (tahini) or peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup (adjust based on sweetness preference)
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 2–3 tablespoons warm water (to thin the dressing)
  • A pinch of red pepper flakes (optional, for heat)

Optional Toppings

  • Toasted sesame seeds
  • Sliced chili peppers
  • Fresh cilantro leaves

Instructions

Step 1: Prepare the Slaw

  1. In a large mixing bowl, combine the shredded green cabbage, red cabbage, and carrot. If using peanuts or sesame seeds, reserve them for topping later.
  2. Set aside while you prepare the dressing.

Step 2: Make the Sesame Dressing

  1. In a small mixing bowl, whisk together the tahini or peanut butter, soy sauce, rice vinegar, honey, ginger, and garlic until smooth.
  2. Gradually add warm water, one tablespoon at a time, until the dressing reaches a pourable consistency.
  3. Taste and adjust seasonings—add more honey for sweetness, soy sauce for saltiness, or red pepper flakes for heat.
