Ingredients

For the Pretzel Bites

  • 1 package (16 oz) refrigerated or frozen mini pretzels (thawed if frozen)

For the Smoked Brisket Filling

  • 2 cups shredded smoked brisket (store-bought or homemade)
  • ¼ cup BBQ sauce (smoky-sweet preferred)
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

For the Beer Cheese Sauce

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ½ cup beer (lager or ale works best)
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire sauce
  • Salt and pepper, to taste

For Assembly

  • 1 egg, beaten (for egg wash)
  • Coarse sea salt or Everything Bagel seasoning (for sprinkling)

Instructions

Step 1: Prepare the Beer Cheese Sauce

  1. In a small saucepan over low heat, combine the softened cream cheese, shredded cheddar, and beer. Stir continuously until the cheese melts and the mixture becomes smooth.
  2. Mix in the minced garlic, Dijon mustard, Worcestershire sauce, salt, and pepper. Keep warm while assembling the bombs.

Step 2: Combine the Brisket Filling

  1. In a mixing bowl, toss the shredded smoked brisket with BBQ sauce until evenly coated. Set aside.

Step 3: Assemble the Pretzel Bombs

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Take one mini pretzel bite and press it slightly to flatten. Place a small spoonful of the brisket filling in the center.
  3. Carefully wrap the pretzel around the filling, sealing the edges tightly to form a "bomb" shape. If needed, use a tiny bit of water to help seal the seams.
