Ingredients
For the Pretzel Bites
- 1 package (16 oz) refrigerated or frozen mini pretzels (thawed if frozen)
For the Smoked Brisket Filling
- 2 cups shredded smoked brisket (store-bought or homemade)
- ¼ cup BBQ sauce (smoky-sweet preferred)
- 1 tablespoon chopped fresh parsley (optional, for garnish)
For the Beer Cheese Sauce
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- ½ cup beer (lager or ale works best)
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- ½ teaspoon Worcestershire sauce
- Salt and pepper, to taste
For Assembly
- 1 egg, beaten (for egg wash)
- Coarse sea salt or Everything Bagel seasoning (for sprinkling)
Instructions
Step 1: Prepare the Beer Cheese Sauce
- In a small saucepan over low heat, combine the softened cream cheese, shredded cheddar, and beer. Stir continuously until the cheese melts and the mixture becomes smooth.
- Mix in the minced garlic, Dijon mustard, Worcestershire sauce, salt, and pepper. Keep warm while assembling the bombs.
Step 2: Combine the Brisket Filling
- In a mixing bowl, toss the shredded smoked brisket with BBQ sauce until evenly coated. Set aside.
Step 3: Assemble the Pretzel Bombs
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Take one mini pretzel bite and press it slightly to flatten. Place a small spoonful of the brisket filling in the center.
- Carefully wrap the pretzel around the filling, sealing the edges tightly to form a "bomb" shape. If needed, use a tiny bit of water to help seal the seams.
