Ingredients

For the Potatoes

  • 4 medium russet potatoes, peeled and cut into bite-sized cubes (about 1-inch pieces)
  • 2 tablespoons olive oil (or avocado oil for extra crunch)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste

For the Coating

  • ½ cup grated Parmesan cheese
  • ¼ cup panko breadcrumbs
  • 1 teaspoon dried oregano (optional, for herby flavor)

For Serving

  • Ketchup, marinara sauce, or ranch dressing (for dipping)
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Prep the Potatoes

  1. Preheat your oven to 400°F (200°C), or prepare your air fryer according to its instructions.
  2. In a large mixing bowl, toss the cubed potatoes with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.

Step 2: Coat the Potatoes

  1. In a shallow dish, mix together the Parmesan cheese, panko breadcrumbs, and oregano.
  2. Roll each oiled potato cube in the breadcrumb mixture, ensuring they’re well coated. Place them on a baking sheet lined with parchment paper or in the air fryer basket.

Step 3: Bake or Air Fry

  1. Oven Method : Roast the coated potatoes for 20–25 minutes, flipping halfway through, until golden brown and crispy.
  2. Air Fryer Method : Cook the potatoes at 400°F (200°C) for 10–12 minutes, shaking halfway through, for an ultra-crispy result.
