Taco Spaghetti

Ingredients

For the Meat Sauce

  • 1 lb ground beef (or turkey for a lighter option)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade blend: chili powder, cumin, paprika, salt, pepper, and a pinch of cayenne)
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • ½ cup water (for activating taco seasoning)

For the Pasta

  • 8 oz spaghetti (or any pasta shape you prefer)
  • Salted boiling water (for cooking pasta)

For Toppings

  • Shredded cheddar cheese
  • Diced avocado or guacamole
  • Sliced black olives
  • Chopped fresh cilantro
  • Sour cream or Greek yogurt (for dolloping)
  • Optional: Crushed tortilla chips or cornmeal sprinkles (for extra crunch)

Instructions

Step 1: Cook the Ground Beef

  1. In a large skillet over medium-high heat, cook the ground beef until browned and crumbly, about 5–7 minutes. Drain any excess grease.
  2. Add the chopped onion and minced garlic to the skillet. Sauté for 3–4 minutes, or until the onions are translucent.

Step 2: Make the Taco Sauce

  1. Stir the taco seasoning into the beef mixture, then add the diced tomatoes with green chilies and ½ cup of water. Simmer for 5–7 minutes, stirring occasionally, until the sauce thickens slightly.
